​Here's a simple collection of recipes for your inspiration and use. Note the "♥" before our personal favorites. Enjoy!

​For those wishing to avoid added cholesterol, you can always opt for plant-based versions of dairy products like we do,
​omit oil in favor of blended nuts or avocado, and opt for more natural sweeteners too.

Soups & Stews

♥ SOUL-SOOTHING AFRICAN PEANUT STEW • This richly flavored soup is a winter delight in our house! Yum!!

♥ ENGLISH PEA SOUP • Sautee 1 diced onion in 5T olive oil. Add 5 T flour (to brown). Add 6 c. prepared vegetable broth and 5 c. of frozen peas, 1/4 t. salt, 1/8 t. pepper. Heat through. Then using an immersion or table top blender, blend to desired consistency (some like it smooth, others like it chunky). Add crème if desired. [No link.]

HARIRA (MOROCCAN WEDDING SOUP) • Another bold flavored soup, wonderful paired with a hearty honey-wheat bread for sopping (its tradition not to use silverware). We omit cardamom and harissa in favor of 1/2 c. chopped cilantro and 1/4 c. chopped parsley. Add cooked basmati rice for a thicker stew.

SUPER EASY CHILI • Grandma's chili has always been a family favorite for most of our crew. Sautee 1 diced onion in a little olive oil. Add 1 can pinto beans, 1 can kidney beans, 1 can Kuner's chili beans, 1 can diced tomatoes. Stir in a little chili powder, garlic powder and a dash or more of Tabasco sauce, to taste. Add diced fresh kale leaves, Morning Star crumbles, or cooked brown rice if desired. Heat through. [No link.]

WHOLE WHEAT CORNBREAD • We enjoy cornbread and beans as a simple and satisfying winter staple. This is an oil free version, but you may also opt to add 2 T. oil in place of the added sugar if it's too dry for you.

♥ BROWN RICE WAFFLES (GLUTEN FREE GOODNESS) • We adapted this recipe to make it a little more healthy, and it won the house vote! (We sub arrowroot powder for the cornstarch; omit the xanthan gum; add 2-3 T. flax meal; and cut back on the sugar - about 1 T. because you'll likely put syrup on top too!)

TOFU OMELETS • We aren't so much a fan of the asparagus filler in these fluffy egg alternative omelets, but paired with sautéed onions, peppers and rice, with a little drizzle of cashew cheese, they keep coming back for more!

ALMOST EGG SALAD • When we decided to reduce our cholesterol intake, we found this delicious recipe to sub for our standard sandwich filler (and it's great on cracker's too! Add dill weed if desired.

OOH-LA-LA-LASAGNA • The name says it all -- this is quite possibly our favorite good-for-you and good-tasting-too lasagna recipe. Feel free to top with a cashew cream sauce or a little shredded mozzarella Daiya. (What can we say, we're fan's of Chef Chloe!)
